Root Theme help on xml files.

which xml file do you edit to change the color of the text for menu? i noticed cool blue and simple blue/green had the black menu with white text for the menu. i have no clue where and which xml file im supposed to edit to change the text color in the menu from black to white so i could see which options in the menu i'm selecting.. please someone help
