Now that my eris is rooted, how do I go about applying themes to it to change colors and fonts etc?

The easiest way is to get Metamorph from the market. There are tons of themes floating around to use with it. Here is a link to the Metamorph thread over at xda-developers. Lots of info about it in there for you.

Seems rather involved. Can't you just download an APK file run the install and then POOF! there are themes to choose from?

there are themes in zip for you can flash through recovery that are alot easier for me.

here is one
[Theme] CM6 MauroFroyo 2 [8/31/10] - xda-developers

but there are a lot of theme over in the xda theme section of droid eris (along with metamorph)
