Help There has to be a way (HELP)

when I upgraded I chose the Galaxy S3 because you could hide the clock on the lock screen. My phone updated and the settings completely changed, disabling the clock on the lock screen no longer is an option. I hate it. How can I get rid of this crappy update? I hard booted my phone and the update is still there. Please help!
