Touchwiz is the name of samsung's android-based operating system.

I think what you are seeing are the permissions for TouchWiz. No need to worry, it needs those permissions to operate your phone. It's perfectly safe.
The launcher is what gives Android it's personality. They can be as simple or fancy as you like. As you found out, TouchWiz is Samsung's stock launcher and you really shouldn't uninstall it. You will end up disabling a lot of features by trying. You can however install a different launcher Like Go, Apex or Nova and your phone will use those instead of TouchWiz. You should know, though that you can't mix and match features. If TW has something you want to keep, it might not be in Apex, etc.
If you are completely set on removing TouchWiz, the safest way is to replace the stock firmware with something else (aka "flashing a rom"). We can help with that, too if you'd like.

Ahh the launcher. Sorry i hadnt even thought of that.
Yeah never uninstall the stock launcher unless you have another one installed as a system app. A phone is useless without it.
Youll probably find that all 3rd party launchers need those same permissions to work properly.
Dont worry about touchwiz. Samsung are a lot of things but i dont think theyre malicious

Yep, they all need pretty much access to everything in order to operate ... well ... everything.
