Root Touchwiz

Up until last week I had a Dell Streak 5 with android 2.2 which not only worked for me but I liked it too. I have upgraded to the Samsung Galaxy Note GT-N7000 with Android 2.3.6 and whilst I really like it there are some features that bother me.

My question is this:
I have read something about "freezing" touchwiz rather than deleting it and I wondered if I did that would allow me to see what the phone would be like without Touchwiz installed and give me the opportunity to go back if it didn't solve the small annoyances I'm having? Or am I misunderstanding this completely?

I assume I will have to root my phone to do this, something else I am new to, but I'm more than willing to learn!
