Do I have to worry about accidentally using data roaming?
Unless you some how turn off air plane mode, no....
I also turned off syncing, so when I connected to wifi, it wouldn't try and download a whole bunch of crap...

Yes. I do this every week. Put the phone in Airplane mode and enable wifi. (I've never turned off auto sync)
I can browse the internet, use Tapatalk for this forum, send/receive email, call home with Skype and even text with WhatsApp (a wifi SMS replacement that other Android, iPhone and BlackBerry users can also download)
The only reason I suggested turning off auto sync.
Is depending on how long it has been since you had internet access there could be a potentially large amount of data it wants to pull down to your phone.
Depending on the quality of the WiFi, this can take a while.
When I was traveling around the Caribbean last fall (I'm assuming DR is Dominic Republic) the quality of WiFi can be hit or miss.

Good point about auto sync Crash. I've rarely gone more than 24 hours without wifi so I never have had a huge backlog of data to sync.
