For now at least. Ubuntu 11.10 is dropping the classic desktop for good. That and even now, the classic Gnome desktop is different from the base mint desktop in several important ways. for example, mint uses a single panel, as opposed to two, and uses all the mint specific tools (software manager, mint menu, mint back up, updater and the resipin software), which ubuntu doesn't use (though Ubuntu now has it's own software center - though it is not quite as nice as mint's). The point is that the experience is noticeably different (and IMHO better) than on classic ubuntu, so it's not just a matter of switching to a classic session.I used Mint last year but came back to Ubuntu in April. I actually quite like Unity but if I wanted classic it's as easy as selecting it from the login screen.
Of course what works for me is not waht works for all, but I wuold urge you to at least give Mint a try, who kows, you mightlike it.
Personally I had to alter it a bit and make it more like a mac (panel on top, dock on bottom). then again I set up all my computers that way regardless of OS - which is probably part of the reason why Unity and Gnome 3 shell bother me a bit.
I can't wait to see what Ubuntu does with Unity though. I really hope that they have been listening to comments and user reactions, and include some much needed revisions to the UI and the unity launcher.
