Backup all your apps and data with Titanium Backup (or your favorite app manager) and maybe all your texts and the like with something like MyBackup if you wish. Make sure you've synced your contacts with your Google account. Then flash back to stock.

If you've got a TapOut Ascend, you won't be restoring the version of Android that came preloaded on the phone. The flash in that thread is for stock 2.1, and the TapOut version had 2.2 on it. I sincerely hope you made a nandroid backup before you flashed CM7, or you're going to have a hard time.
