Unrooting any Android phone is as easy as deleting the su binary, i.e. the su (switch user, superuser, what ever you think it means, etc) command.
Rooting doesn't actually "Do" anything to a phone except add the su command back (comes with real linux). in a sense the OS is already set up to do su commands, it just needs the command to do it. the SuperUser app is a managment app for permissions that lets apps do a su command when necessary, kinda like sudo if anyone is familiar with linux
I am assuming you mean is "put my phone back to a place where no one can tell I did anything to it" that is always possible as long as bootloader access is unrestricted, just Flash a vanilla rom, or in Moto or HTC phone case, flash a leaked version of blur or sense
