Similar concept, but the details are quite different. You end up with a lot more choices. On a jailbroken iPhone, you essentially retain all of the stock iOS which you then may tinker with to change/improve things.
You can root the Inspire and keep your phone's software (ROM) very close to stock. But you can also choose to run any of at least a dozen alternate ROMs that partially or completely replace AT&T's version of Android and offer a wide range of different software features.
