Root Upgrading from EB01, out of the loop

I rooted my phone a longggggg time ago, and am/was pretty happy with it. I decided to stay away from the constant updates for awhile, and get back at it when some noticeable changes had been made.

Well, now is the time... except it's been so long since I messed with anything, I'm barely sure where to start anymore.

So, looking at my phone's info:
Firmware version: 2.2.1
Baseband version: S:i500.04 V.EB01
Kernel version: 2.6.32.9
Build number: SCH-I500.EBO1

Running Red Voodoo... it says v2.5.1.x

Believe I have the lagfix enabled, as I thought I did it a long time ago, but can't be sure at the moment. I also think I had a Voodoo kernel

My ROM is Nextang Orange Explosion


Can someone point me in the right direction as to how to currently optimize my phone and get up to the latest/best firmware, CWM, and kernels? If I have to go back to stock and then reroot so be it, but not sure where to start at the moment.
