Upgrading my ROM

I'm one of these people who do upgrades and don't mess with my phone until it's time to unroot or upgrade my ROM.

So here's the dilemma: I have CWM and Siyah for my AT&T Galaxy S2. I don't know if I want to upgrade to a new ROM or wait on Jellybean. Three more months and I may have the S3 or something else.

Here are the questions:
How do I unroot? I have CWM and Titanium Backup to take care of backing up with.

If I wanted to upgrade to another ROM, what's available and tested that's worth installing?

I installed Odin Mobile tonight. Do I need that or can I install another ROM with it?

And does it overwrite my existing ROM?

I guess backing up before installing is a given.

Unroot: How to Unroot to Official ICS on AT&T Galaxy S2 SGH-i777! | Galaxy S2 Root (compliments to Max - not me)

Other ROMs: cyanogenmod has CM9 stable and AOKP have another stable version that I heard works pretty good (check the galaxys2root website)

To install another ROM, you can use CMW and Siyah (I recommend use the secondary ROM installation as a test first - to see if you like the intended ROM).

If you install the ROM as primary, it will indeed overwrite the ROM that you already have (I've done it a few times - no issues). Everything on your internal and external memory (the "sd card") will be kept. Only the partition that contains the primary ROM is affected when overwriting.
