Root [Verizon] What does "Custom" on device status mean?

I moved this to the note 3 section where other users can chime in.

It typically means the software has been modified - it could be rooted and running a custom ROM or the stock ROM rooted

Next question: any means to "unroot" it? (Sorry if that's a dumb question. Rooting is completely foreign to me.)

What happened was I had purchased a GN3 online at swappa. It was advertised as 3 weeks old, mint. The device condition was pristine but I noticed the status as mentioned in my first post. Well any questions I had regarding whether the phone had been rooted where answers when I found a "SuperSU" app installed after a factory reset. I've never used that app in my life.

So, yeah, I had a "Buyer beware" experience. The good news is the seller seems on the level and will take it back. PayPal also seems to be on top of it.
 
Custom, as said, means the phone has been rooted or had a custom ROM flashed to it.

To unroot and get back to stock is pretty simple to do, but the Super User app must be removed first or it'll be stuck there forever, along with any other apps that only work when rooted. Then you need to download your stock firmware for your particular model and flash that using a PC and PC software called Odin.

Really it all sounds more complicated than it is. I can show you how if you need help.

Since you're already more than halfway there, why not try a custom ROM like Hyperdrive and see what the ROM craze is all about? It's got all the great features of Android and the Note 3, while eliminating all the bloatware and limitations of the stock OS. I never thought I'd end up rooting and ROMming my Note 3 since it was so versatile to begin with... but I guess you can't keep a good geek down :D

The ROM you select has to be for the Note 3 version and on your specific carrier. Since I don't know what carrier you're with, I can't really make a more specific recommendation.

If you still want to go back to stock, though, Dynomot or someone else in the All Things Root section can certainly help you get there.

My GN3 is on VZW. Now, I only use Macs. Is that an obsticle in any way?

What I'm interested in is running vanilla Android, killing bloatware but keeping Samsung's camera features. Does such a creature exist?

Yeah: Scott Breen, the developer of Hyperdrive ROM, kept all the best of the stock OS, and took out the garbage. He's up to RLS 8 which is KitKat 4.4.3... although it's tricky and requires a few more steps than RLS 7 which is 4.4.2.

Yes: having a Mac is an obstacle... but not catastrophic. You can read up on the features and tweaks of Hyperdrive 8 here:
