What exactly does wiping data in recovery actually wipe?

Wiping data is the equivalent of a factory data reset. It is useful and necessary to go between ROMs without problems and bugs.
As far as what is being wiped, that would be the phone memory. The SD portion of that memory is left untouched, however.

Nope, haven't unlocked the bootloader yet. Just rooted.lol.

I read to unlock the bootloader before customizing the phone, since you have to factory reset so that's what I did, then quickly rooted to restore my TIBU backup from my DroidX. I then proceeded to set up my phone.
The next day I updated the radio and installed Liquid.

Just to be clear...unlocking the bootloader will wipe everything, sd card as well.
However, wiping data in custom recovery (as you do when flashing a new ROM) well not wrote the virtual sd card, as mentioned above.
