Ok, what's it do, what's it for and what are the benefits of changing it and what is the best setting?

It's the amount of memory any 1 app can use to run. Setting larger allows bigger apps to run faster.

32 MB seems best. Much over that starts to become detrimental. 36 is the most I can go to

How does one check the current heap size?

Its in settings>cyanogen settings>performance on cyanogen based roms.

Otherwise, download "VM Heap tool" from the market.

I've flashed lots of roms, seems the Sense HD roms runs best with 36 or 48 heap because of how incredibly sluggish the rom can be (like RCMixHD, Insertcoin,etc.) but with a bigger heap the memory can get clogged up fast and prevent other apps from running properly and force close. Some roms can run at 24 heap like one on my LG. I think HTC's stock RUU are 24 by default.
