Wait for Gingerbread or Root?

I'd say to go ahead with rooting. Means you get more choice in the long run. After all, there is very low risk factor when you follow instructions.

I've personally rooted by following the awesome guides on this site (thanks Guys!) And installed cyanogenmod 7.1. Much faster, less bloated (no sense) and I have more storage :)

I'm going on holiday in the morning and I've decided if there's no Gingerbread update when I get back I'm rooting and installing Redux (and I might do this even if there is!) I use Go Launcher anyway so there's not a lot of Sense that I actually use anyway. There's just 2 things I would miss - the HTC keyboard and the integration between contacts and Facebook.

SUroot - you say you take the HTC keyboard with you whereever you go, does this mean there is an apk available for it? And with regards to the Facebook integration, is there a good way to get your Facebook pictures stored against your Google contacts in stock Android so that they should up in the Dialer etc?

Yes, the HTC keyboard is one of the few bits of HTC software that work without Sense being present. Look in the toolbox thread, linked from his sig (it's "useful downloads" in mine) and you'll find it. I believe you also need Clicker_hi, from the same place. Use the "mirror" links out of preference.

28th July. They are cutting it fine

If I remember correctly, Froyo was released on a Sunday to minimise the impact of any failed updates to those that rely on their phone for work. It would not surprise me if they do the same again with GB.

If there were to be a sweepstake on when we get this, I'd go for 3pm GMT Sunday 31st July.

and there was me thinking that my question would not get answered, thanks for all the advice people......still waiting for the update lol

At the end of the day, only you can make the decision. Theres much more choice if rooted and we can't guarantee how rootable the official GB release would be. If it were me and I hadn't rooted, I would now.

I doubt that the infamous 2.3 release will be less rootable than hboot 1.06, especially given the recently announced policy change on locking bootloaders. I just don't see why they'd put effort into locking it down tighter at this point. But while hboot 1.06 is now rootable, it took time, so I cannot promise that there wouldn't be a delay. AFAIK none of us here have any internal knowledge, so we're all just making best guesses.

If you really don't want to root, then wait, and I know that not everyone wants to interfere with their device in this way. But otherwise I cannot see any actual advantage in the "official" release - if anything is better integrated, it will be available in customs ROMs very shortly afterwards, with extra features which HTC will never release.

... I cannot see any actual advantage in the "official" release -

Apart from Exchange ActiveSync security policy support.

AFAIK, no ROM's apart from rooted stock HTC ones support this ATM. I was on Gingervillain, but as well as it being laggy (which could have been mu Go Launcher settings TBH), I found I just couldn't live without my Exchange mail, and didn't want to pay for an app that would circumvent security in questionable ways.

Right now, I'm back on a rooted stock Froyo with Apps2SD+ and waiting for official GB. I do miss the GB text copy/paste features though.
