I drink my coffee black and have for sixty years. I like dark roast which I understand is found bitter by many. My wife on the other hand doctors her java with a non sugar sweetener and enjoys a pinch of cinnamon added. The greatness about coffee is the variety of the taste of beans from different regions, how it was roasted, how it's prepared, and what flavors can be added. It is a versatile drink.
I tried the cinnamon trick awhile back, it was not bad. I prefer flavored coffee but had to give it up when the prices went sky high, now drink the store brand and really have gotten used to it.
