What's for dinner ?

Not the usual Christmas Lunch:
Whole Salmon baked with Lemons, 'Christmas Bubble & Squeak' (Sprouts, Carrots, Parsnips, Onions and Chestnuts par-boiled, crushed then oven-baked with some sea-salt and extra virgin Olive oil) And buttery baked potatoes.
With My Home-made strawberry wine, and a Pear & Cherry trifle (with a good amount of Rum) to finish.
 
Last night was a chicken salad sandwich on a homemade curry pumpkin seed roll with fig jam and spinach. Sauteed green beans and cherry tomatoes, roasted fingerling potatoes. Mmm mmm good. :)
 
I have a big pot of pinto beans cooking. Added to some left over pork roast from yesterday I'll be enjoying some great burritos later tonight.
 
Tonight I had tuna casserole. I know... I know. But hey.. it wasn't half bad. Large can of tuna in water, large can of cream of mushroom soup, sliced mushrooms, shredded cheddar cheese, frozen peas, egg noodles, and crushed potato chips.
 
Never tried it. I'm not big on the helpers. I'm not big on tuna... I'm not big on casseroles.
The above tuna casserole was not bad.. honest.

Tonight is just about as simple. Chili cheese dogs and chips. :)
 
Tonight the wife brought home some home made tamales. These were made by a co-worker as a fund raiser for some charity she supports. Half were chicken and half were pork. Made the traditional way, wrapped in corn husks. Being as my wife bought two dozen :eek: the lady threw in a jar of her home made salsa. The tamales were great and the salsa was excellent and very hot. It made for a great dinner and I already know what I'm eating tomorrow night. :)
I love being supportive of a good cause and way full at the same time.
 
Going all out tonight. Inviting a friend over (woulda made this anyway if it was just the lady and I).
1) Kale salad with a cashew/romano/anchovy dressing. Inspired by this recipe:

(just going with kale, not a big fan of collards)
2) Breaded and fried pork chops, cherry red wine sauce, butternut squash puree, roasted brussel sprouts and pearl onions.
3) Chocolate chips and almond cookie - ice-cream sammies for dessert. :)

Edit: May be busting out our only prized bottle of wine if the lady says it's a go.

Some of the best wine I've ever had, and produced in Virginia nonetheless. :)
 
Yesterdays comfort food dinner, Grilled Cheese. And some Pasta Carbonara I made about a week ago. Does anyone have a good pizza dough recipe?

Hmmm pizza dough recipe? Guess when I make it it's always by feel so I rarely measure anything. You're obviously gonna have to scale it down, but here's the recipe from Pete's where I used to work:

17qts water (warmish)
50# all purpose flour
17oz salt
1.5oz instant dried yeast

We scaled the balls at 24oz for an 18" pizza. For something individual, I'd go 4-6oz. If you have time, make this a day before and after it's initial rise, shape and refrigerate overnight. Make the handling and flavor that much better.
 
You inspired me, making some pizza for a late lunch. :)
Hey, that recipe, we'd make sometimes 6-7 time just for a Friday! :eek:
Thankfully buying a pallet of flour (50 bags) at a time makes it a little easier. ;)
