What's for dinner ?

I think they are the best fast food fish sandwich... at least I like them the best. I haven't tried the other outlets in quite some time. They may have something better to offer nowadays.
 
I don't know what this is called... but I had it. :) Sliced and fried beef sausage log, white rice, cream of celery soup, and swiss cheese. It's pretty good and has been a number of years since in was last made.
 
We will likely just snack tonight. We are having lunch at my son's today. His oldest daughter, son-in-law, and their four kiddos will be there. We get to see them so seldom... we are way looking forward to some fam time with the great grand children.
 
We're having KFC tonight.

I haven't either. I've be teased by their advertised chicken chunks. Our local KFC lost my business a couple of decades back. They are still here... they must have tightened up their ship.

I have a big chuck roast simmering in the crock pot with some potatoes and carrots. It's been a long time since I last slow cooked a roast unless you count corned beef brisket and cabbage. A favorite that we have a few times a year.

It wasn't like I remembered it. She got the extra crispy because the last time we had the OG KFC it seemed greasy.
When I was a kid we'd always grab some
"Kentucky Colonel" when we went to visit my grandmother.
I can still remember when Harlan Sanders was still alive and would visit the restaurants to make sure they didn't add carrots to the coleslaw.
 
The first KFC in my town burned to the ground many years ago. My father said, maybe they finally got some chicken fully cooked. Under cooked and greasy was the old and the newer KFC norm. It finally got so bad that I refused to eat there. I assume they surely can fully cook their tenders or whatever they call them. I like the taste of their extra crispy crust. I'll have to give them another chance.
 
No Bojangles around here. I have not tried Popeyes though I've heard good things. They have a few in the city but none in my burb. Not that the drive is far... just not that handy. We have a Churches that I haven't tried either. We simply don't do much fast food. I grab something local sometimes but the wife refuses. I grab Mexican from a local chain with only three links called the Roadrunner now and then. I will eat Arby's fish when in season. Once in a while I'll get Chinese take out. We have at least one of all the burger franchises and same with the sub shops. They just don't do it for me. I'd rather fix my own. I guess the chicken sounds good because I grew up on fried foods. My wife has shied away from breaded fried meats and after my heart attack I limit myself as well. Grill griddle or smoke is our go to. Home fried chicken with mashed potatoes and chicken gravy..... mercy!
 
My mother and her boyfriend always seem to head out in secretive hahaa.
They tend to stick to their stomping grounds but also light things up with a few surprises.
I tend to stick with whatever they are going though,
My "grabbing a bite to eat" is usually at my side occupation, I mix up the menu in my mind, on whatever they are making though, something about that small stress of time going throughout the loop holes, sometimes I can always seem

to confort menu to me.
I know what I really am craving for too.
And the staff over there knew a few of them throughout time.

Not getting sentimental though hahah.
 
Left over chuck roast will be the beef in our home made vegetable soup. I will dice up the left over meat, potatoes, and carrots and will add some sliced okra, corn, and green beans. I'll use some of the roast stock and some tomato sauce and season to taste. It should prove to be a great dish for an extremely cold day.
 
Since my wife retired, a bit over a year ago, she's taken to cooking more again. She's a great cook, nothing exotic just basic country cooking. She doesn't like to fry too much though.
Me, I can open up cans and make a sandwich fairly well.

Pretty certain that we'll be having leftover chicken tonight.
