Help why does streaming video on 3g stutter more than on WiFi?

Wanted to watch some live-streamed shows today at braco-tv.com on my Incredible since they've said it is now possible with android phones... I am confused about the difference in watching with 3g or wifi... could someone offer a simple explanation? [obviously not a geek, but curious nonetheless]

Why does the stream stutter so much on 3g, even with higher bandwidth?
It looks like I'll have to make sure I am near a wifi source for the show.

They have a support page to check to see if the device will work for streaming.

First check: platform
They correctly detect that I am on 2.3.4
And then they suggest I install a browser; Chrome/Firefox/Safari/IE/Opera
I have been using the native browser just fine, do I NEED a different one?
Second check: flash ... everything OK there
Third check: bandwidth ... they say minimum 600 Kbps needed to run stream
WITH WIFI ON: I get about 1.5 to 2.5 Mbps [ATT DSL]
WITH WIFI OFF: I get about 7.0 to 8.0 Mbps [Verizon 3g]
 
Simplest answer is that 3g is slower than wifi. 3g speeds are only around 1mbps where your wifi is probably at least 5 times that speed.
 
But I still don't know why the video runs MORE SLOWLY and with MORE CUTTING OUT when I am connected by wifi.
