Will you get the Gingerbread update if you are rooted?

You will get the message to upgrade, but if you do, it will probably brick your phone. At least it did mine...

I had to ODIN back to stock Froyo (EC05) and then I manually upgraded.

If I were to ODIN back to stock Froyo ECO5 and run this Gingerbread upgrade am I then able to re-root the device and, if so, can I use the same method I used to root originally?

Yes, you can re-root, but not the same method as before. You have to do a couple steps. Follow this YouTube video first:

I did the above steps and am rooted again.
 
The method in #4 works like a champ.

In the 2nd video he breezes right over it...so make sure you move su-3.0-efgh-signed.zip to your SD card before you boot into clockwork mod.

Happily rooted again running stock 2.3!
