i just updated to 2.3.4 thru kies but i want to know what changes have been done. anyone know?

Samsung do not release them I'm afraid to say.
so i'm basically downloading patch without knowing what it does?
like after the patch i noticed there's a folder called samsung containing 2 music soundtracks from samsung i was wondering if that came from the patch or something i installed

If you are referring to the folder "Samsung" on the SDCard that contains the sub folder, "Music", which in turn has two songs... "Don't contain yourself" and "Over the horizon", then they arrived with my firmware update.

hawker is correct when he states that Samsung do not release the changelogs for firmware updates. Also let's not forget that if the firmware has been "manipulated" by your service provider, before being returned to Samsung for release through Kies, it will be different to the vanilla firmware that Samsung is releasing for various locations.

By this I mean that once Samsung have signed off on the firmware it is distributed to the various service providers for them to add or subtract features. For instance, in the UK, Orange disallowed tethering and removed the option. also operators may want to add their own features and app's together with boot screens, etc.

This is why the firmware for operator branded handsets sometimes does not appear for some weeks or indeed months after the official Samsung release.

One more reason why some people choose to root their handsets to get the latest firmware.

my phone is not branded
i got it from expansys.ca so does that mean i have vanilla firmware?

Generally yes, but the only way to be 100% sure is to check the CSC. Enter *#*#1234#*#* in the dialer; your CSC is displayed and the three-letter code after the model number (i9100) can be compared to the list here.

it shows XWKI4

list says xw is from uk
nothing on ki4
i'm living in canada with a canadian carrier

i dont know what this means as all the code in that list is 2 letters

XEU is listed for the United Kingdom at the bottom of the list entitled, "Samsung official letter code".

Therefore, you have the European Firmware (XE), United Kingdom variant (U).

As you will see from that list, there are a number of XE (European) versions each with their own countries variants, i.e. XEG (GERMANY), XEF (France), XEP (Portugal), and so on. In answer to your question, your firmware will be vanilla save for any location changes denoted by the last letter.
