I don't think that would work because a nandroid backup also backs up your apps and personal settings. The best thing to do to get back to Gingerbread would be to use Odin and install it.
I guess if you are the adventurous type and want to test this out. While a n android backs up everything you should still be able to extract the apps that were backed up in the nandroid. I have seen an option for that in titanium backup pro but you still need to use Odin to back to gingerbread and try to extract the apps from the ics backup. Theoretically it should work but I would say save a copy of your backup on your computer just in case something goes wrong and you want try this method!
You can get 5.0.2.7 by getting rom manager from the play store. Select Flash Clockworkmod Recovery and select your phone from the list. Pretty easy process. I don't really know the difference but I've seen one dev advise using only 5.0.2.7 with his (DarkSide) rom.
