I prefer to keep things in folders (on the buttons) and the only things on the (single) home screen are clock and a couple of widgets for quick control.

4 on my HTC One - which is an all-time record low actually.
Not a single app launcher or folder on the desktop (though I have folders in a rotating dock). Each screen has some widgets (clock+system info, music, calendar, todo, train timetable, news, weather). Quick controls are in the notification pulldown.
1 for my weather, calendar, time/date widgets (actual 'home' screen)
1 for my 'system' stuff
1 for my 'media' stuff
1 for my heavily used apps (Tapa, Twitter, Instagram, Keep etc.)
5 on the new G3, 5 on the Note2 it replaces, 5 on my wife's GS5, 5 on my sons (and my old) LTEvo, 5 on the N7, 5 on the Nook........I never realized I like 5 so much
2 on a Galaxy Note II: home screen with date, weather, calendar, and most-used apps in the dock; folders with action-verb icons (Connect, Explore, Play, etc.) on the second. Just switched to this last week after running 5 screens for most of the past year. Trying to simplify.
On my old HTC Desire Z, I used 7. On my current Samsung Galaxy S3, I use 5. Nova Prime launcher allowed me to reduce the number of home screens to 5. Before Nova Prime I had 7.
I go for a very clean setup. The home screen has nothing on it, the left screen has the Android Pro Widgets favourite contact widget, the right has nothing but the Shazam widget. I could manage with 2, but I have terrible OCD and my main screen has to be in the middle, so I added a screen for the shazam widget.
Rather than have apps in my dock, I have 4 folders, Games, Media, News, Apps and the App drawer icon.
I use Appsi for the 8 or so apps I use most frequently.
1. Random text widget
2. Utility shortcuts
3. Business shortcuts
4. Main page, frequently used widgets and shortcuts
5. Various web shortcuts
6. Timekiller shortcuts
7. Random scribble widget
My screens are laid out 5x5, twenty-five shortcuts per screen, plus a folder on each screen for even more shortcuts. And how many of these apps so I use? About a dozen of them, but ya never know...

Exactly the same way. I use one as well, but put my most used apps on my dock. I use Nova and have it set for 5 docks, so everything is a swipe or two away.
I have 4 on my lucid but only 2 are in use as I've deleted all the downloaded apps with the exception of those I use daily in preparation for the arrival of my G3 on Monday.
