Like Andy said, no, it will not change your HBoot, or render your previous nandroid backups unusable. But, if you are concerned, go ahead and update to 2.3, then make a new nandroid backup. Then test it out by restoring to a previous nandrid made by 1.8 for your own piece of mind. This will confirm for you that it works. BTW, you could always flash back to Amon RA 1.8 anyway.
And just in case you're still not sure, the developer confirmed that backups are backwards compatible. Anything made in a version previous to 2.3 will still work in 2.3. And in case you're worried about hboot, the only way to update it is to either accept an OTA update (which you can't do with a custom recovery anyway) or purposefully flash it yourself. Flashing recovery would never do that (unless somebody packaged it that way, but nobody *ever* would).
