The easiest way to restore your apps with root is by using Titanium Backup or a similar app. App backups are stored on the /sdcard which is not wiped by a standard factory reset. So after the reset, you can install Titanium Backup once again from the Play Store, then use the restore feature to bring back all your apps and their data.

On most newer devices, the built in Google backup does essentially the same thing though from cloud servers. The only negative there is that I'm not sure app data is retained in all cases and I've found the latest backup can lag behind real time. But again, with root, you can backup immediately before a factory reset and retain apps/data on a real time basis.

I'm not sure I understand the 2nd question you posed. Typically Opera Mini is not an included app, so it would be installed from the Play Store. You can download multiple browsers and use none, some, or all of them at your choice. Some devices will have setting options for "default" browser and other apps so in those cases, you could specify the default browser of your choosing.

@iowabowtech is right about using Titanium Backup. It's very useful for restoring your apps after a factory reset.

Alternatively, also using Titanium Backup, you can convert apps to system apps. You simply tap on an app, swipe left over to the special features tab and select "convert to system app". Titanium Backup is one of the main reasons I root. It's hard to live without.
