Mexican Chicken Casserole
2 Bags of Doritos
2 Lbs of shredded chicken (Boil the chicken)
1 large can of cream of chicken soup
2 cans of rotel
(mix the soup and rotel together in a bowl)
1 bag of shredded Mexican Style cheese
This is something that I don't know where my family got the recipe from but it's one of the best dishes I've ever had....
You put a layer of doritos down, then you take a layer of chicken, and then you take pour the soup/rotel mixture ontop of the chicken, then you put another layer of doritos down (I crush them), repeat the processes until you fill up a casserole pan. After that you put cheese on top, let it cook in the oven for about 20 mins at 350, and voila.

ut one 2lb package of lima beans(I didn't like lima beans until trying this)in a large pot. Cover with 2" of water, start to boil. In a skillet brown and render 1lb Italian sausage till it looks like taco meat.Put that into the pot with the lima beans and turn heat down to low. Let simmer with the top on for 1 to 2 hours depending on how firm you like your beans(I simmer mine for 2 hours for that melt in you mouth effect).Stir pot occasionaly and check level of water making sure water stays just above beans. There's all kinds of prepackaged cornbread mixes that you can put in a baking pan or in a skillet.Just follow the directions on the box.....This can also be heated up in the morning,slicing the cornbread in half and pouring warm syrup over the top of the cornbread.
