The problem with that is there is already hundreds of books, published by lucasbooks and sanctioned by Lucas, that tell the story for 50 years after episode IV.
True, so that wouldn't stop them from fitting the sequels into that storyline, or going beyond the 50 years. Consider that most of the principal actors are getting old and it would be harder to try to create films in the existing universe without intoducing new faces for existing characters. Unless movie technology advances to the point of an exact CGI and voice replica of existing characters (which I'm sure is on the horizon).
Of course as I write this, it never occured to me that they could jump back beyond the existing universe ala "knights of the old republic" i.e. the video game franchise. So many possibilites, so much money to burn on the production costs...
