Has anyone used a replacement app launcher for this phone? I'm also interested in knowing if anyone has removed the stock launcher.

yes, the shabby mods have replacement launchers in them.
I am using a custom gingerbread launcher, I like the simple launcher

So then its safe to uninstall the standard app launcher? I guess I'm just a little dubious of the small size of the application.

yes if you have chosen a replacement you can remove it

yes if you have a replacement, if you dont you will not be able to do much with your phone if you remove the stock but dont have one in place.
