Asking for trouble with tethering?

I have the 1st generation nexus 7 32gb wifi only, and my phone carrier wants$5 more a month to gv me 500mb for tethering, well bk in the day the carrier had a special $50 unlimited everything, no data caps! So with my fone being rooted and my nexus, i found the tethering app barnacle has not let me dwn on tethering, very simple app, i use my tablet as a gps ( waze app) so i turn fone on and start barnacle and it basically hooks up to one another with no problems, knock on wood, ive not bn charged any extra on the data, but works perfectly for me, just thought id share my two cents

Specifically, will I burn through my data plan more quickly than if I were just browsing, etc. on my phone?

There's a good chance you will, yes. You'll do more of the same due to the larger display, and the temptation will be there to do other things too such as video streaming.

If low bandwidth isn't a problem, I would recommend tethering via Bluetooth if possible, since tethering via Wifi can quickly drain your phone battery. In the 4-5 months I've been using native tethering via Bluetooth I haven't once had a noticeable drain on the phone battery.

Slightly different situation, but for tethering my netbook to my phone I use wi-fi, but plug the phone in via USB (which I cannot tether via). That actually charges the phone.

As to the OP, I would suggest turning off automatic updates to limit downloads, and note that tethering to your phone is likely more secure than many of the public wi-fi connections you'll get while out and about.
