No, the phone was not connected recently. As far as I know, the time shows the battery life left, not how long it's been unplugged, right? No why 8 mins left if it's at 91%?
No - it shows the time since it was unplugged from the charger.

Down to 33% now. I have 5 facebooks running and I backed out every time I used it. I'm getting upset.

That is typically the performance of a new battery. It takes awhile for the battery to function at its best.
Welcome to the world of technology. As you go along, you'll learn different things about your devices and its accessories. ツLOL... Are you being serious? New batteries need to be "broken in"? That doesn't sound right.
I'll post this again since maybe you missed it. I think it would solve your dilemma. You seem to be on the wrong page with most of your assumptions. You keep talking about what is running. Yeah, if the phone is working properly there SHOULD be a ton of stuff running. That info is meaningless, as I said earlier. You need something to tell you how much cpu time those running apps are taking up. They can be running and taking up 0 seconds of cpu time, you know. My Nexus currently has well over twenty apps running, over forty if you want to count system processes. That info alone? Useless.I recommend buying System Panel app and turn on monitoring. Then you can see what app is doing the harm, which is probably your culprit. And beware of the phandroid app. I forceclose it after every use(which is a lot); it often gets stuck in some process and drains battery like that.
Photobucket app and Quadrant wouldn't stop running so I removed them. Yahoo mail keeps running, too. Voicemail and Maps are running and I have the GPS off and haven't even used the voicemail yet. S-Voice likes to continuously run as well....

Do I need to return the phone for the EVO LTE? Or am I missing something?
If your screen was on for like 3 hours+ then what you showed is typical.I am 100% sure it is because of your poor signal.
Notice "cell standby" has the highest usage in your battery stats.
You are using your phone in an area where your provider does not have good service, and thus destroying your battery life.
For some. I flashed the latest radio and its marginally better.
Back in the old habit eh!
(which radio!?)

I used to have alot of battery issues but it seems to be fixed. Currently on 44% after 9hours and 19min.
What I did was look at the Advanced Task Killer and I saw that S-voice opened itself up every time I killed selected apps. Since I don't use it I disabled the app altogether.
Also there appears to be a diffrence in between batteries. (I got a preorder package with an extra battery, charger etc.) After I drained the first one I went on to the second one and noticed the second one lasted longer than the original. So there might be something in that.
I also disabled the NFC android beam, S beam (why is this all on by default?) and other stuff I wasn't using.
And now the phone seems to be running for alot longer than before.
Hope there is some actual truth in this as opposed to simple coincidence.
Yeah battery life is good. The cell standby issue, I think the cause is reporting.
Basically a guy on XDA says the battery profile for the SGS2 was the radio uses 2mA. On the SGS3 its set as 34mA. He pretty much stated this was an error on Samsung's part.
I decompiled my framework and removed the 4, now it looks more like this:
