I'd like to try a few ROMs, but I want to be able to restore passwords and apps from one ROM to another. Is this possible or do I need to start from scratch every time I flash a new ROM? I have a super long Google password and it takes me forever to enter in all the special characters on a new flash.

You can carry over apps using titanium backup or my backup root. Not sure about passwords because you must manually set up your Google account.
For the passwords you can use an app such as KeePassDroid which can then be backed up by apps such as Titanium Backup or MyBackup or Rom Toolbox. Those will backup your apps and app data.
You'll likely want to invest in the paid version for whichever backup app you choose, but that is something you can decide after playing around with them.
