Not on a permanent basis. You can change it for any tab you have open and it sticks until you close the tab. Touch the three dot icon in the top right of the screen in Chrome and select "request desktop site."

I'm assuming your going to need a different browser. Any reason it needs to be the iPhone user agent and needs to be Chrome?

Also, if you go to a site, then check 'request desktop site' then bookmark the page, it should take you to the full site when you go through your bookmarks next time.

You'll have to try other browsers... I don't see google adding an iPhone agent setting to either of its browsers!
