You have to use what works for you. People can't sway me on what to use on my phones, devices, computers, etc.
Icarus and stock will always be a safe bet. Huawei has the luxury of a whole slew of people working on a project. They have quality control (questionable) and they wouldn't dare release a project that wouldn't work across all Ascend regardless of the differences in hardware.
But would Huawei ever put Gingerbread on the Ascend? Probably not. It's definitely possible. If a hobby programmer like me could do it, it would be really sad if a company worth of $25 billion dollars couldn't. Gingerbread doesn't feel all too comfortable on a phone like this. The hardware just sucks on it.
But I'll be damned if it wasn't interesting running Android 2.3 on the Ascend.
If stock or Icarus is your best choice, use it. If CM7 floats your boat, use that. I'm not sure why people make such a big ordeal over these things...
