Root Downside to deleting default apps?

Is there any downside to getting rid of some of the default apps on the Optimus V? In particular Poynt, Ubersocial, Youtube, and Latitude? I have no use for these, and could use the memory (my phone has been rooted).

On a related note, is the lack of main memory common to Android phones, or did I just get the budget model? I got this phone just a couple of weeks ago, and was unaware of the memory problem at the time.

This question can be better answered in the ATR sub-forum.
Before deleting any system app it's always better to have a custom recovery with a backup of your system made in that custom recovery (nandroid backup).
It's also wise to get an app like Titanim backup and backup all your apps to the sd card.
Titanium Backup will also let you freeze an app to see if it will affect the system adversely. If it doesn't affect the system,then delete it
The memory can be increased by installing a good custom ROM like Harmonia or BACKside..

Deleting them alone won't give you more space, deleting their updates will however. What it will do is increase your speed and battery life.

A better option is to use a rom, that will increase your space by quite a lot, as well as increase speed and battery life dramatically.

Would the named apps actually qualify as system apps? They don;t seem "low-level" enough. But I could be wrong. :)

I'm assuming that "freezing" means flagging the app to not run, right?

Thanks. I'm not really ready to do anything drastic, but I'll keep it in mind.

Are you saying that updates and the original app are both kept on the phone? The updates don't replace code?

Deleting system apps is more of a risky and drastic move imo. Flashing a ROM us simple and well improve every aspect of your phone. Battery life gets a nice increase, speed is faster, tons more space, tws bug fixed, etc.

If you're referring to the nandroid backup, I'd love to do one, but I've spent over an hour here and elsewhere to find out exactly how to do this with no success. Perhaps you could point me in the right direction?

Boot into recovery and go to backup and restore. Then select make a backup
 
There it is ^. If in the future you make a newer backup and whant to delete an old backup, use a file manager and go to the clockworkmod folder. Delete the one with the datestamp your looking for.
 
I'm assuming that by "recovery" it means this procedure:

1. Power off.
2. Now Press and HOLD the following Keys in the same order: Home Button, Volume Down Button, and the Power Button.
3. Let go off all the buttons when you first see the LG logo.
