My question is suppose i root and remove all the bloatware, do i have to put it back on to get ota's? Not even gonna go down the flashing/rom path... not trying to get hooked plus i like it when everything just 'works'

Ok, this is a good question that I honestly am not 100% sure of the answer. I have
heard that the bloat needs to be on the phone (as it is part of the stock ROM) in order to receive an OTA. If this is the course of action you choose to take, what I would recommend is that you root, create a recovery (which you should always do anyway
before you make changes) of the Stock ROM and then remove the bloat. This way, you can always flash back to the stock if necessary.
That said, you need to look at it from this perspective...An OTA will most likely break root anyway, so if your desire is to have an official OTA, why not simply un-root when it starts rolling out from the carrier? Either way, if you want an official OTA, you will no longer have root till the vulnerabilities that were patched get discovered again! Of course, you can also stay rooted and install the RUU components!
Now, here is the thing that MOST never seem to explain!!
As you probably know, a ROM is the entire installation package. Each ROM is based on an OS (Eclair, Froyo, Gingerbread, etc...) By rooting and flashing a ROM, you are still getting that OS, so un-rooting to get the official and then rooting again and removing certain components (Bloat in your case) is essentially a custom ROM anyway. Once source of a new OS gets released, developers begin creating new ROM’s based on that OS.
The bottom line is that the custom ROM's you would be installing would be the OS, themed with different components changed or removed or added, etc. Some rooters disagree with my viewpoint which is to say that I am fine un-rooting, getting the official OTA, waiting for the vulnerabilities to be exploited and then re-rooting, creating a new recover and then flashing ROMs again.
