Root extra annoying applications

i have the SAMSUNG INFUSE... switched over from WM...now i am trying to get the same experiance if not better. for starters, i would LOOOVE to get rid of the extra apps that r on my phone...im pretty sure i am rooted, just not sure what to do next...any help would be appreciated.
2. is there a single thread with the popular useful downloads?

1 dload titanium back up from the market. open it up and allow super user access, find the app you wish to get rid of and press on it, select freeze. use freeze, never delete. it can be tricky to get those back later if you need them
