For backing up apps, it depends on if you are rooted or not. If you are not rooted MyBackup Pro is the best, if you are rooted Titanium Backup is the best, and yes I have used both. Titanium backup is definitely better, but if for some reason you don't want to root, then stick with MyBackup Pro.

The only thing to keep in mind with MyBackup pro is that they have a monthly charge depending on how much data you backup online to their servers. If you back it up to your SD card there is no extra charge. You can't backup to other peoples sites (like Dropbox or Mozy). Here is an explanation from MyBackup Pro:

"The $4.99 is a one time charge for the Pro version which comes with 100MB of online space for free.
You can subscribe to more online space for $1/month or $10/year for 250MB, or $2/month or $20/year for 1GB extra."

Lookout caused freezes and random reboots on my X. Since I removed it my X has been running great.

I am on the 'great experience' side of using Lookout. It hasn't cause any problems (yet) for me (it was one of the first apps I downloaded when I bought my phone a few months ago). I am using the free version (which still gives you anti-virus, find your phone, and backup (the backup is limited in the free version).

If you want to use mybackup pro and have a backup without paying, you can always copy your backup file from your SD to your computer via USB. That is what I did when I used mybackup pro before I started rooting.
 
I have an Optimus-V also very low app space (not sure if it's any lower than the Nexus). What I do:
1. Back up apps you might use (but only occasionally) to SD, then uninstall. You can reinstall from SD in a minute or two if you need it later.
2. Uninstall any free Amazon apps you seldom use, you can reinstall from Amazon later.
3. Get rid of apps you don't use.
4. Replace apps you use with apps that are smaller or can be moved to SD. (ie: I replaced Weatherbug about 3mb, with Weather Buddy 600mb.. yeah you make some sacrifices).
5. Put an app like "SD Watch" on you phone, it's small and will tell you when an app can be moved to SD. SDWatch | AppBrain Android Market
6. Put a cache cleaner on you phone, like App Cache Cleaner - Android app on AppBrain You can get rid of 5-10mb per day if you surf much.

I'm able to keep 40mb free by doing these things. Appbrain shows 85 installed apps, total 126 mb. My apps: tcat007's Apps on the VM670 - Page 1

Excuse me being thick here, but what is the difference between installing on the SD card and backing up to the SD card? I have moved all the apps I can to the bigger SD card I bought.
 
My current favorite is Smart Shortcuts.

It's pretty much identical to what Apps Organizer is. Both are free. Both got a 4.5+ on the Market. Both have thousands of reviews.

The main thing I like about Smart Shortcuts is actually pretty lame. When you bring up the sub-menu widget for a shortcut on your home screen, you're presented with a small menu. This is true for both programs.

Apps Organizer uses a dim white as their text color. Couple that with low brightness on your phone and in certain light conditions you might be doing an extra squint to see what text is under the icons you're looking at. The other, however, is solid white, so it's a little more catching for reading the text.

Stupid reason, but nonetheless, when you have two apps that are nearly identical you gotta find SOMETHING to pick at, right?

Smart Shortcuts does however have ads running when you're in the app. But I spend so little time in that app once it's set up that I don't really find that to be an annoyance.

That said, my hat is off to both applications since they are nearly identical. However, I still prefer Smart Shortcuts as of now. There's no doubt an app like this is a necessity on any Android phone with a power user for an owner.

I can only imagine that the backup process compresses the data into an "unusable unless decompressed" format, thereby saving space however retaining the data if you ever need to restore it. I can't say this for a fact though... but if I had to bet a dollar, this would be the story I'd stick with.

"Install to SD" is having the app installed (ready to use), either on the phone or split between phone and SD card (settings/apps/manage/"move to SD" if available). This moves a good percentage to SD card. Can't do this with most system apps unless rooted. All apps show up in app drawer.

"Back-up to SD", is backing up the .apk file to a folder on SD. Then you uninstall the app to free up space. You can't open the app unless you reinstall. You just click on the app in the SD folder and install it when you need it. I do this if I only use an app once every couple months. These apps do not show up in app drawer, you find them in whatever folder you backed them up to.

I tried Carhome and a couple other similar apps. I did like Carhome best, but decided I didn't like having to open it and then have 2 or 3 screens to swipe to. So I created my own on one launcher screen with Desktop Visualizer. It's not as cool looking as Carmode, but who needs a second speedometer in a car? (the "car mode" button turns on the speakerphone)
