Root Favorite features after rooting?

After having my phone rooted, I first tried Smash, then White Widow, Evil Eris 3, and now I'm using the Droid Does rom. I'm hoping to find a rom that I can look at everyday and not get sick of it. I don't want to keep changing around. Reasons that I wanted to root were: wireless tether, get rid of stock apps, and speed up the phone.

Am I missing other cool things about rooting? If so, what else am I missing out on?

Apps2SD! No more worrying about running out of storage space

I also enjoy the higher level of customization.

I'll second what Dustin says, but I am running Kaos.froyo which has the equivalent of apps2SD but has been more stable (at least for me).

Being able to get in there with Root Explorer and trim out the applications and other muck I have no use for.

Root-only apps! (drocap2, root explorer, etc.)

The increased speed and ability to connect to my work's exchange server (The Hero works perfectly with it's default ROM but for some reason HTC Eris-based ROMs don't so I have to use ASOP ROMs.)
