Root Few questions about rooting

If i choose to root my phone to get ride of the annoying bloatware included

1. do I have to install a moded ROM?
2. do i need the base messaging app for apps like handcent to work? Or can i safely remove it?
3. Are there any stock apps that I want to be carefull removing?

2. I don't know the answer to that one
3. Better to freeze system apps with Titanium or move them somewhere where they won't run (you'll find instructions around here), rather than completely deleting them, until you're sure it won't cause problems and that you aren't going to want them back!
