Rooting is device specific. What carrier do you have we can stick this thread there and you can get some opinions from the resident's over there.

Benifits of rooting follow along the lines of

Bloatware Removal
Nandroid Backup - the ability to "clone" the current state of the device
Run Root Programs like Titanium Backup
Generally a faster phone - more responsive

but for me rooting=freedom. you are not confined to what the manufacturer or carrier wants you to have access to on the phone. it also usually equals better and performance as well.
