On my notification bar it says i have a max of 4 bars when before i had 6 as usual and they are not lighting up also only 3 of my contats are showing up

1) AOSP uses four bars rather than six, like sense, and calculates the signal strength differently. You shouldn't notice any real-world differences in call quality, etc.

2) Did you try to force-sync your contacts? You may need to wait a little bit.

Also after I restore my apps and settings when I go to sound under settings it force closes but before I do any restores it is fine

Are you using titanium backup to restore all apps and settings coming from a Sense ROM? If so, you can't do that without having all kinds of problems. You should only restore apps, and (in my opinion) don't do it as a batch. Restore only what you need. You should change your settings manually. Trying to restore everything between sense and AOSP (and vice versa) is going to break things.

To restore apps only, you can do menu->batch->Restore missing apps with data (or Restore all apps with data). I recommend, though, that you go to Backup/Restore, and manually restore only the apps that you need, It's cleaner, and will help you avoid conflicts. Do not restore system data (settings) when going from sense to aosp. It will break things, as you've seen.

To change the notifications panel widgets, you go to CM settings, I believe. It should be under the normal settings menu.

so just to clarify, under batch, the "restore all apps with data" is ok? It's just the one that says "restore missing apps with system data" that is bad?
I ask because on the right side it gives you a number, next to "restore all apps with data" mine says "248" and next to "restore missing apps with system data" it says "166"

I always recommend restoring apps on an app by app basis. It's safer, and helps troubleshoot problems you may run into. This is especially the case with switching between AOSP and sense, and back. If you absolutely must restore all apps and app data at once, you can use either the restore all apps or restore all missing apps batches. The difference is that "restore all apps" will do just that. If the app already exists, it gets overwritten by the batch restore. The "restore missing apps" option will restore only the apps you don't already have. Really, there's not much of a difference beyond how long it takes. That, and if you have older versions in the backup, you might end up downgrading some apps. Either way, just never restore system data between AOSP and Sense, and vice versa. That will break things.

To update your profile and prl, make a nandroid backup, flash any sense based ROM that you like, update your prl and profile like normal (menu->settings->system updates->update profile/prl), then restore your nandroid backup.

thanks, so I guess the only question I still would have is :
Does the "restore all apps with data" option restore the system data or not?

No, it restores app data. It specifically would be things like app settings, game scores, etc. etc. System settings are referred to as system data. That's what you don't want to restore, at the very least, between aosp and sense.

awesome thanks, yea I kinda need that app data, cuz when I tried CM6 I only restored the apps 1 by 1 without the data, and all my levels I beat on angry birds were gone LOL

Even back on sense? Do you normally get bad coverage? Maybe something wrong with your airave. Did this start only after you switched to CM?

No I never had bad coverage on sense it was after I switched to cm and like half of my contacts still are not showing up on cm but they all show up on sense

Have you noticed any affects on call quality or network speeds? Like I said before, signal is calculated differently with CM. Just because you're seeing fewer bars doesn't mean you're getting a different signal.
