Root How do I undo ALL this?

I'm rooted, running the 2.15 radio update, and MIUI 10.29 ROM. I also have S-OFF. I'm also sure that I installed a custom kernel at one point but I'm not sure now.

I want to put on the official Froyo with Sense, unroot, go to S-ON.

Is there a particular order of operations? I'd really appreciate the help!
