Help how do you remove some of these default apps?

Dragging application icons into the, "trash," bin at the bottom of homescreens does not remove or uninstall them. It only removes the icon from the homescreen that it was present on.

You need root access on your phone in order to remove, modify, or simply re-name the stock applications.

Root, then uninstall using titanium backup, or you can delete them using root explorer. If you choose to remove them just be careful there are some apps that will really screw up your phone if you delete them like backup assistant or google talk.

Just read up in the all things root under the droid x section.
