How to change the apps at the bottom??

I knew how to do it with Gingerbread but it does not seem to work now.

Open your applications drawer, press menu and select view type, select customizable grid, press menu again, select edit and now you can edit the bottom icons; if I remember correctly, this is the same as GB

You remembered correctly. This is more of a TouchWiz thing than an ICS thing.
