How to disable data syncing between Android and my Google account

Hello,
a few days ago I bought the GT540 and I'm quite happy with my choice.

The only problem is that I don't know how to turn off the data syncing between my Google account and my phone.

I've logged in my gmail account 4 or 5 times, and then, when I wanted to try google maps (some GPS testing) I got some suggested phrases that I was looking for more than a year ago on my notebook.
It feels really strange that somebody's collecting data like this and even more scary that my phone instantly knows this.

So, I would like to turn it off and I don't really know how. Any help?

It should be under settings, accounts and sync then go to your google account and uncheck all the boxes, you could also disable background data and auto sync in the accounts and sync menu.
