How to uninstall zips

Re-flashing the custom ROM through recovery will bring it back to the un-themed version. Make a nandroid backup before doing this, just to be safe.

+1 Remember that you shouldn't need to wipe anything if you are reflashing the same ROM. You can also make a Nandroid backup before you start modding and re-install the backup if you no longer want customizations.
 
I agree, technically should not have to wipe anything when flashing the same ROM over the current ROM. I would, just in case, wipe cache and Dalvik cache anyway. :)

It might just be one of my many self imposed rules, but I have always had good luck doing that. Feel free to not do it though if you do not feel like it. ;)

+1 to wiping Dalvik cache and cache

I would always recommend wiping both, even if you are reflashing the same rom;)
