Help Initial adding of a Gmail account...

Is there anyone to not have the contacts sync as well as anything else when you first put your gmail information in?

You could skip the account setup, and then disable Wifi/Mobile Data and add your account. Then you'd need to go into your account settings to check/uncheck which items you want to sync.

I think that will work, though it may not because it won't be able to verify your account name and password until it has web access. Worth a shot though.

Assuming your phone has no data on it, then you could always create a new gmail account and use that. Nothing will get synced.

You can then delete that account and use a new one.

You can also use multiple accounts...and choose which ones do not sync
