IF i unlock the bootloader and root a GSM nexus:

can i still receieve OTA official updates?

You should AFAIK one of the mods here tested with the CDMA version and was able to get updates while rooted stock the GSM version shouldn't be any different

Yep!

The thing that stops the OTA from installing is if you have a custom recovery installed (it'll download either way, stock or custom recovery).

But you can install a custom recovery (ClockworkMod) and easily re-flash back to the stock recovery if you need to:
