You can sync contacts, and calendar to your Gmail. You can grab an app called iSyncr and sync your music. There is also an app called SMS Backup+ that does a great job backing up your text messages to your Gmail. (You can also restore)
I don't know what you would need HTC Sync for at all (I've never used it) but you could boot into Windows provided you are on a semi-current mac, if you really needed to use it.
